Summer Garden Salad

This is a take on a traditional Caprese salad but with 4 different types of tomatoes and the addition of Lemon Cucumbers.  Everything was given to us from our friend's garden (thank you Heather and Steve!), except the Mozzarella, thus the name Summer Garden Salad.  If Lemon Cucumbers are not available, feel free to use regular or English cucumbers instead.

2 red heirloom tomatoes

2 yellow heirloom tomatoes

10-15 small yellow cherry tomatoes

10-15 small re cherry tomatoes

5-6 Lemon Cucumbers

1 package of Mozzarella cheese, buffalo in water is preferred

1 large handfull of basil, chiffenade - reserve the top of one for a garnish

Dressing:

Drizzle extra virgin olive oil and balsamic vinegar on top of everything and season with salt and freshly groud black pepper.  Be sure to season between the layers as you stack the slices on top of eachother.

Caprese must be on the braing -- we just made one this evening. Not as pretty as this; ours was "rustic" which just means "messy." We were impatient to get to wine-drinkin' and sitting out on the patio to enjoy the dwindling nice summer nights!
